What did you have for dinner?
rye sourdough with sunflower seeds (Pelican bakery, best bread in town)
fresh salmon
feta cheese with black pepper, garlic and chili

Roasted Pork Belly with Asian Coleslaw and Baked Potatoes.
Salt crusted the skin side about 6 hrs before cooking to draw out the moisture, gave another sprinkle of salt about 2 hrs before oven time..
Peeled and cut the potato and microwaved in a container containing 1/2 inch of water for 10 mins. turning over once.
Placed potatoes in roasting pan and cooked with a splash of oil for about 10 mins.
Placed pork belly on top of potatoes and roasted on high to blister and crackle the skin - this took about 8 mins, turned heat to low and slow cooked.
About 1 & 1/2 hrs later, had wonderful roasted spuds with a pork fat flavor, Pork belly with a salt crust and fuck all dishes to wash.

So tonight I made myself a Steak Sandwich.
Two thin slices of Scotch Steak, quickly fried for 90-120 seconds served between two slices of Hole Grain Bread with Lettuce, Sliced Mushrooms, a fried egg along with Tomato, onions and a splash of Worcestershire sauce.
That was tonight's meal.
The taste hit all the right spots.

Last night I grated cheese to use with a spag bol. There was only half a block left so I grated all of it, put plastic over the bowl and stuck it in the fridge.
Today lunchtime I remembered the cheese and thought I’d make a quick toasted sandwich for lunch. I managed to pull it all together whilst i was on a zoom call.
It all came together well, the sandwich was ready as the call finished and I was contentedly munching into my sandwich when I thought it tasted odd. Undeterred I persevered and ate half of it before I could go no further.
It turns out that between last night and lunchtime today my wife, daughter and dog snacked on the cheese, washed up the bowl and then chopped up some garlic and reused the same bowl, and put in the same position in the fridge.
So my generous helping of cheese was actually a ridiculous amount of raw garlic.
I still have an unpleasant, bitter taste in my mouth 6 hours later.
2/10 would not recommend.

Roast Leg of Lamb and Roasted Spiced Potatoes tonight all cooked in an Air Fryer.
Having never cooked in an Air Fryer before, this is a bit of a challenge.
And being a Bloke - I therefore refused to read the instructions.
I'll have to wait for SHMBO and the daughter to pass judgement on my cooking.

This has to be one of my more successful cooking attempts.
I made a dry rub of Keens Mustard powder, Onion powder, Garlic powder, Sweet Paprika, salt and pepper to taste and rubbed it on chicken thighs and let it infuse for several hours.
Cut up 3 potato's into 4-5 mm slices and quartered a large brown Onion.
Fried up the Potato and Onions for about 4 mins and removed from the Frying Pan.
Gave the dry rubbed chicken a good coating of vegetable oil and tossed in into the pan,
About 8 min's later I chucked the potato and onion on top of the chicken, put the lid on the frypan and let it all simmer for a while over a very low flame.
At about 15 mins I turned over the chicken thighs, replaced the potato and onion on top of the chicken and added about 150 mil of water to the frying pan.
At about 30 min's, removed from frypan and served over a bed of rice.
I'm very critical of my own cooking, but in this case - it was more than just acceptable.
