I have read that there were developed orthographies for Cambodian minority languages, based on the Khmer script.
Can you please provide me a sources, which contain explanations of the Khmer script-based orthographies for such languages as Kuy and Jarai (alphabet books, primers, vocabularies, scientific articles)?
For other languages I have found such sources.

Try reaching out to some of the Christian organisations around Phnom Penh. I think I remember meeting someone with an NGO that had been translating the Bible into one of the minority languages. You may not agree with their mission, but they can possibly help answer your question.
